Vegetable Fried Rice

  • 2 cups cooked rice (cooled)
  • 1 tablespoon oil
  • 1 teaspoon garlic (chopped)
  • 1 small onion (sliced)
  • ½ cup carrot (chopped)
  • ½ cup capsicum (chopped)
  • ½ cup cabbage (shredded)
  • 2 tablespoons spring onion
  • 1 tablespoon soy sauce
  • ½ teaspoon black pepper
  • Salt to taste
  1. Heat oil in a pan or wok.
  2. Add chopped garlic and sauté for 30 seconds.
  3. Add onion and cook until slightly soft.
  4. Add carrot, capsicum, and cabbage. Stir-fry on high flame for 2–3 minutes.
  5. Add cooked rice and mix gently.
  6. Add soy sauce, salt, and black pepper.
  7. Toss everything well for 2 minutes.
  8. Garnish with spring onion and serve hot.

Serve with Manchurian, chili paneer, or tomato ketchup.
