Veggie Quinoa Bowl
Ingredients
1 cup cooked quinoa
1/2 avocado, sliced
1/2 cup cucumber, chopped
1/2 cup cherry tomatoes, halved
1/4 cup carrots, grated
1/4 cup sweet corn
2 tbsp olive oil
1 tbsp lemon juice
Salt to taste
Black pepper to taste
Instructions
1 Cook quinoa according to package instructions and let it cool slightly.
2 Arrange quinoa in a serving bowl as the base.
3 Add avocado, cucumber, tomatoes, carrots, and sweet corn on top.
4 Mix olive oil, lemon juice, salt, and black pepper for dressing.
5 Drizzle dressing over the bowl.
6 Serve fresh and enjoy.
